Y’all. Who loves peanut butter cups? If you’re anything like me, you have one, then another, then spiral out of control. Am I right? Sugar is a drug. If you don’t believe me, think back to a time where you took a bite of something sweet, then went on to have 10 more things because the high you get is so amazing. What I’ve found on my nutritional journey is that our body is built to PROPERLY process whole foods, natural and organic products and nothing else. Are we inevitably going to crave junk? Yeah, probably. Are we ever going to wake up and no longer desire a Kit Kat? Who knows? Who cares? The point is this: OUR BODY WAS NOT DESIGNED TO PROCESS JUNK. Period. I believe wholeheartedly in the idea that moderation and proper portions are vital. I think it’s absolutely okay to treat yourself and do what makes you happy. However, my body absolutely does not agree with many of the food groups and I’ve just learned to create alternative versions of those things that nourish and fuel my body.
Last night, Adam and I were watching TV and I got a craving for something sweet. I wanted a PB cup so bad, but I knew it was too late for that kind of sugar rush. Cue the idea to make my own healthy version. This is one of my new favorite sweet treats and the best part is that you can make 7 from this recipe, store them in the freezer and not have to worry about a sugar overload next Tuesday when you are binging on Netflix and get a craving.
1/2 cup of coconut oil melted
1 scoop of organic chocolate protein powder
organic peanut butter
7 cupcake liners
In a bowl, melt your coconut oil and then whisk in your protein powder. Distribute 1 tbsp of the oil and protein powder mixture into the bottom of each cupcake liner. Place in the freezer for 10 minutes. Remove from freezer and layer 1 or 2 tbsp of organic peanut butter to each cup. Use your tbsp to layer the remaining chocolate mixture over each cup. I do just enough to cover up the peanut butter. I also added sprinkles to the top to be fancy, but this is completely up to you! Place back in the freezer for 10 minutes. That’s it! They are ready to eat, but leaving them overnight in the freezer will make them even better! Best part is that you can eat these any time of day to curb a sugar craving. Since they are made with three natural ingredients, they will not cause a crash and will only fuel your body!
