3 Ingredient Pancakes

You guys! These pancakes are literally my favorite breakfast ever. I started making them years and years ago when I went gluten free and I’ve never gone back. You can be as plain or creative as you want to and I promise you will not be disappointed.

2 eggs, 1 banana, cinnamon

Combine all ingredients in a food processor. (I have a Ninja and it’s my lifeline.) Blend until smooth and then pour into a nonstick pan on medium heat. When bubbly on top, flip and repeat until the batter is gone. I like to make little pancakes and eat them as they come out of the pan because I have zero patience.

*You can top these pancakes with whatever you want! I like to use pure maple syrup, almond butter, or sometimes berries and whipped cream for a treat. Lately, I’ve added 1tbsp. to the batter after blending for some extra superfood!
